Monastery Fruitcakes do not need to be kept refrigerated. They are best enjoyed at room temperature. Once opened, store the unused portion in its tin. A fruitcake will keep for several weeks to one month. For storage longer than that, wrap the cake tightly in several layers of plastic bags and place in it your freezer. Thaw overnight at room temperature.
